Quick dinner

A jeweler friend was marveling at how much I get done. “I really don’t know how you do it.” So I confessed. My house is not as clean and tidy as hers is and not all the dinners around here are gourmet.

Something’s got to give, right? If you want to make lots of jewelry and have a business selling it, compromises have to be made. I took this picture to share with a friend who has young children and really struggles to cook dinner.

This dinner took me about three minutes to put together. While I usually chop my own onions, this time I bought the pre-chopped ones. Start clock: open package of onions, add to slow cooker, open package of chicken, add to slower cooker, open package of sauce, add to slow cooker, turn it on! Ask husband to make rice and some veggies later! Stop clock: about three minutes!

And, it was yummy!

I swear I don’t cook like this all the time, but on busy days when I’m teaching a class or day camp, or on a terrific all-day studio day, this is my solution.
